My Story
From Swedish Roots to Global Flavors
Hi, I’m Elsa! Growing up in a small town outside Stockholm, my earliest memories revolve around my grandmother’s kitchen. The scent of cardamom and cinnamon, the warmth of freshly baked bread, and the magic of transforming simple ingredients into something extraordinary sparked my lifelong passion for cooking.
After studying culinary arts in Copenhagen and traveling through Southeast Asia, I discovered that the best recipes aren’t just about following instructions—they’re about understanding flavors, embracing creativity, and making every meal an adventure. That’s exactly what LeapLunch is all about.
Today, I live in Portland with my partner Marcus and our rescue dog Luna, constantly experimenting with bold flavor combinations and sharing recipes that prove healthy eating doesn’t have to be boring. Every recipe I create is tested in my own kitchen and approved by my toughest critics—my dinner party friends!

When I’m not in the kitchen, you’ll find me hiking the Pacific Northwest trails with Luna, my golden retriever rescue who has an uncanny ability to find every mud puddle within a 5-mile radius. I’m also a weekend pottery enthusiast—there’s something therapeutic about working with clay that mirrors the meditative process of kneading bread.
I’m passionate about sustainable living and source ingredients from local farmers markets whenever possible. Marcus and I grow herbs and vegetables in our backyard garden—nothing beats the taste of sun-warmed tomatoes picked minutes before they hit the cutting board!
Fun fact: I speak four languages (Swedish, English, Danish, and terrible but enthusiastic Thai) and I’ve never met a fermented food I didn’t want to try at least once!
